Since Marty/Pacino is happening now that they are 75+, I will say Spike Lee/Morgan Freeman.

Claire Denis and Julie Delpy (because you'd assume french ladies would work together) Nicole Kidman and Steven Soderbergh (because she was directed by everyone and he directed everyone, especially with they both being hugely popular in early 00's)

Leo / Fincher (my favorite living actor & my favorite living director) God damn , its almost criminal that they haven't made a film together yet.

Cough Cough Devil in the white city almost was supposed to be coughs. Oh God I would love that (if of course Scorsese passes it on to Fincher but I don't see that happening)

If you think some of the greatest living actors have raised in the 70s (De Niro, Nicholson, Pacino, Hackman), around the time when a group of directors (Coppola, Scorsese, Spielberg, Cameron, De Palma, Lucas) started making some of the greatest films ever, then it's really weird that none of these actors has ever worked with Spielberg.
Almost every actor who used to be a star back in the 70s and 80s did work with these directors and Spielberg has collaborated with many of these, like Hopkins, Walkin, Streep, Connery, Kingsley, Hoffman, Dreyfuss, Scheider, Freeman. But not having collaborated with no one of the four I mentioned above is a miss.

Dustin Hoffman was regarded as definitively one of that group (sometimes to the exclusion of Hackman) and he was a the title character for Spielberg in Hook. So I don't find it weird, as if he set out to avoid working with the defining American actors of that decade. If he did, he'd have found a way to avoid Hoffman as well. He at least got Dusty.

Even without the context of the whole car crash incident, it's strange to me that Werner Herzog and Joaquin Phoenix haven't worked together. That seems like a match made in heaven.

That's what I'm saying: He DID work with many of them (Hopkins, Walkin, Streep, Connery, Kingsley, Hoffman, Dreyfuss, Scheider, Freeman) but not with De Niro, Pacino, Hackman, Nicholson. Such a pairing would be quite special imo but it seems unliely. The two of them have been retired.

Wes Anderson and Johnny Depp seemed like a natural pairing awhile ago. Not so much these days...

Nolan and Emily Blunt. She was even considered for the role of Rachel Dawes in The Dark Knight.

There was a time in which I thought Wes Anderson could give Gene Wilder one last great part. Imagine him and Murray sharing the screen.
Oh, well...
