One with 1-3 seasons.
Sharp Objects any good or is it too slow? Castle Rock?

Sharp Objects is trashy pulp nonsense written by a hack. But Gillian Flynn just ain't my cup of tea, so take that into account.
Castle Rock is good, and Episode 7 is one of the most stunning episodes of television this year (and Sissy Spacek deserves the Emmy flat-out for it). It's a touch too convoluted toward the end, but depending on how they stick the landing on next week's finale, that might clear up. In any case, it's well-acted and very atmospheric.
I'd recommend Counterpart as a good series to watch.

There was this series (episodes, not linked to each other) in the early 90s, called Fallen Angels. Take a look at this

The Shadow Line. It's hard to track down, but if you can, it's one of the greatest shows (well, mini-series rather) I've ever seen.

The Fall starring an excellent Gillian Anderson and Christian Grey. It's on Netflix, it has 3 seasons of 6 episodes

The Sinner is really good. 2 seasons, eight episodes each. It’s weird because it was only meant to be a miniseries and the first season was based on a book while season 2 wasn’t. By all accounts, season 2 should’ve been a terrible cash grab but it was actually really good. Carrie Coon is in season 2 and she’s terrific as usual.
I’d also sorta recommend Wayward Pines but it screwed up where The Sinner succeeded. Billed as a miniseries but then had a season 2 with no more source material to go off of and then season 2 sucked. Season 1 was pretty good though, at least until the disappointing finale.
The Alienist also has some flaws with the story but it’s a well-acted, nicely shot period piece.
Might not be what you’re looking for since it’s a true story but I really enjoyed Unsolved: The Murders of Tupac and the Notorious B.I.G. One thing that’s interesting is that we see two different investigations, one from 1997 and one from 2006 and they come to different conclusions so you can decide for yourself which theory you think is more legit. It’s pretty solidly acted, particularly Jimmi Simpson, and interspersed with some Tupac and Biggie flashbacks.

Season One of The Missing is pretty fantastic. True Detective's first season is probably the best thing ever on television (along with Band of Brothers). I haven't finished Jack Ryan yet, but it's pretty good popcorn fare so far.

I'll echo the previous two posts - several shows that are highly watchable.
The Missing S1 - a missing persons thing but there's a darkness and emotional depth that bubbles underneath the whole time right to the end.
Wayward Pines S1 - like an extended Twilight Zone, in some ways actually pretty clever.
The Sinner - S1 Bill Pullman fans gotta see and S2 (which I liked better though very padded) worth seeing for Carrie Coon who is srsly great and I've nver been a fan before. But I'll add I think both seasons suffer from weak final episodes.
Another show, some called it "the German Stranger Things" - Dark (on Netflix), very twisty and loopy but kinda fun to watch and piece together.
And one more on HBO that for some reason no one has seen - Mosaic
