Every time I’ve seen these movies, it’s only ever been the theatrical cuts (aside from watching the Saruman scene in ROTK). I hear a lot of conflicting reports on the benefits of both. Some say the extendeds are superior, some say the theatricals are better. I plan on giving the extended cuts a try, but four hours each just sounds exhausting.
What say you? Thought this would be an interesting discussion.

Extended Cuts. It really builds up the experience and a lot of what I appreciate about the trilogy overall comes from it.

The only film of the trilogy that I think truly benefits from the extended version is The Two Towers. It's almost like a completely different film. I could take or leave the other two extended versions. The theatrical version of Fellowship is perfect as it is.

The theatrical. Keeps the pacing tight without compromising the integrity of the story. If a film works just as well without a scene, then that scene should be cut, no question. The extended editions are nice to see additional things from the books fully realized and I think that Saruman scene should have been left in ROTK for the sake of giving closure to that character's story given his important in TTT, but unless I'm watching it with other people who are hyped for it I'm probably only going to watch the theatrical cuts from now on.

Theatrical, always. The new scenes from the extended editions aren't just unnecessary; some of them are plain bad.
The Two Towers Extended Edition does have a couple of great additions, though (Boromir flashback especially).

Never seen the extended, but watching ROTK (or pretty much any of them) I never thought "Gee, this needs to take even longer to get finished".

It really depends on how much like the films already. The EE adds a lot of world building and little character moments. There are some great scenes added in and some that, while not really necessary, are still nice. I don't think the pacing is actually hurt that much. To me, they still feel much shorter than they actually are. Non-fans wouldn't get much out of it, but I definitely prefer the EE.

Theatrical but Two Towers extended edition is a worthy one and could be considered as the better version.
