Ed Wood is the best thing he's ever done, and I'm quite fond of Edward Scissorhands. I also still have some affection for his Batman films, which I loved as a kid, though I don't think they quite hold up as well now.

I've seen all but Miss Peregrine (really enjoyed the book, just haven't got around to it) -- but my favorite is still Pee-Wee's Big Adventure.

To me Ed Wood is his crown jewel, with Edward Scissorhands and Big Fish rounding out his holy trinity, and Beetlejuice just on the outside looking in. The two Batman movies, Corpse Bride, Sleepy Hollow, and the great Mars Attacks would round out the wonderful ones. I've become so jaded with the man I haven't even seen his latest, and for whatever reason I have yet to see his debut. Everything else is varying levels of crap. Frankenweenie I wanted so much to love, but that which makes it wonderful also ruins it.

He’s a very peculiar case for me. He’s one of those directors that even if his movies aren’t good, and his most recent films have been patchy, I’m still always excited for something he directs.
Edward Scissorhands Big Fish Ed Wood Corpse Bride Sleepy Hollow Sweeney Todd Big Eyes Batman Mars Attack! Dark Shadows Frankenweenie (2012) Miss Peregrine’s Home for Peculiar Children Alice in Wonderland Batman Returns Planet of the Apes
Been too long since I watched Beetlejuice. Never got around to Pee-Wee. Always surprised it has such a devoted following.

As most people have already said, Ed Wood is his crowning achievement ( he should do more character pieces like this one ). Batman and Batman Returns would be next in line, Beetlejuice, Mars Attacks! and Big Fish for the watchability factor and then Sweeney Todd, because I love musicals. I try to always watch his films, at least for the technical aspects, although I haven't seen his first and last film so far, and he should avoid animation, those are among his worst films.

I also echo what people have been saying about Ed Wood. I think that's just his most mature and intellectual film. I think it deserves to be called his greatest film - the only one of his that definitely makes my top 5 of the year.
However, my favorites from him are simple. I think he had one great period: 1994-2001. I know Mars Attack and Planet of the Apes is included in that period, but I never got the hate for either. Planet of the Apes... I really don't get what's so bad about it. I think it had great violent action and it's so savage - in hellish and utter darkness. Mars Attack is like Sharknado, it's not supposed to be taken seriously. Sleepy Hollow also indicated a time when he still had his genuine touch, and not the recycled brands of his later career.
I find most of the rest of his career.... decent, I guess. I think his earlier movies are alright, but I wouldn't call Beetlejuice, Edward Scissorhands, Batman and Batman Returns great. And as far as his movies after that peak period (94-2001), I only kinda mildly like them... Big Eyes, Chocolate Factory, Sweeney Todd.... are just good, but the only one I would say really indicates he's gone off is Alice in Wonderland. It was time for him to go after that debacle.

His best work is in that ’88—’94 era, capping off with his masterpiece Ed Wood. I most recently rewatched Batman Returns which is an inspired studio pic, deeply demented and a lot of fun. Also usually enjoy his work with Depp, most recently (and surprisingly) Dark Shadows which had a decent mixture of wit and camp and extreme violence.

My favorite will always be Edward Scissorhands. That had a strange magic to it. But the kid in me still loves Pee Wee's Big Adventure, Beetlejuice, and Batman Returns. I can't stand most of Burton's 21st century stuff. I never saw Big Fish though.
