Not Unforgiven, anything but that.
I vote for The Conversation.

So tough... I love him in everything. Today, I'll say 'The Royal Tenenbaums.'

One of my favorites, yet there are still so many of those lesser-known performances I still need to see. I also think he's even better in French Connection 2 than the first, and pretty much saves the film from being a meandering disaster, but he's still pretty great in the first one.
I pick The Conversation, though, just because it was such a rare performance for him to give and yet he played it better than I think any actor at that time could have (with the possible exception of Roy Scheider).

It has to be from his peak period, I'd go with Scarecrow

The Conversation. He brings a certain presence to any movie he stars in.

The Conversation though I also love him in Tenenbaums and have gained appreciation for Unforgiven.

It mightn't be his best, but Get Shorty is an excellent comedic turn. It's the only time I've awarded him.

Tough call between French Connection and Unforgiven. Both performances that might be among my Top 20 or Top 30 performances of all time. I go with the former now.

The Conservation. Should have been nominated for an Oscar for it. Amazing work!
