The Filth and The Fury is my default answer for this, Julian Temple's documentary on the Sex Pistols which works on so many different levels it's amazing. You don't have to even like the bands music to appreciate what the film in terms of historical context, pop culture movement, societal dividing line and in fact if you didn't know about them at all you'd think it's a work of fiction (the bands being shown in shadow for the later interview segments to preserve the moment, etc.) Rock and roll as a cultural touchstone is long since dead but the footage he gets for this film and how he gets a shaped narrative over what it all really meant is something else. "We Are The Best!" is another one I love, Lukas Moodyyson's story of little girls who form a band to fit in even though, they don't, at all. Basically these two movies articulate the spirit and sensibility behind not just the very best Rock and Roll but of something idiosyncratic and unique in its creation as well.

The Monkees' Head. An interesting commentary on being trapped by fame and a near masterpiece of surrealist humor and psychedelic film. It was a concerted effort to destroy their public image and it worked, although it took out their careers right along with it.
