I know it sounds weird. Has there been any movie where the protagonist (a good guy) snaps on a bad day and ends up killing the woman he loves but later regrets it?

This is basically the boiling under plot of many great foreign films (though many swerve that at the end and if someone is killed it's either the protagonist or someone else) from the 70s and especially by Rainer Werner Fassbinder - most notably in his his early classic Why Does Herr R Amok?

Offhand, a few of my favorites:
Amadeus Madoka Magica: Rebellion (forgive my nerd leanings, but it does fit the category thematically) Three Colors: White (this skirts the line, but I'm counting it because thematically it fits)

A Brighter Summer Day fits your description perfectly. That one's also pretty much as good as a movie can get, so definitely worth watching regardless.
Also Lost Highway, which is brilliant as well.
