What are your favorite romances where the couple only gets together at the very end or after a really long build-up – like a “will they, won’t they” situation where the couple getting together has an “Ah, finally it happened!” cathartic effect. The movie itself doesn’t have to be a romantic drama/romcom, so it can be any romantic couple in a movie regardless of genre.
Some of mine:
Anne and Gilbert in Anne of Green Gables (1985) and Anne of Avonlea (1987)
Peter and MJ in Spider-Man (2002) and Spider-Man 2 (2004)
When Harry Met Sally
For TV, Jim and Pam in The Office

Anne and Gilbert in the 50 episode anime Anne of Green Gables, which beats out your example on sheer length (I need to watch the 80s movies since I love the anime and book so much.) But in movies, it's probably The Apartment for me. Himizu is another terrific example, although they don't technically get together in the end, as Sumida has to serve his prison sentence and get some damn therapy for the fucked up shit that movie puts him through

Mulder and Scully, though I would've rather it never had been consummated.
