You can define “simple” however you want (quick and easy to make with few components, doesn’t take a lot of prep, etc.) I eat peanut butter sandwiches for lunch a lot... no jelly, just peanut butter on honey wheat bread (I really just love peanut butter). I usually have the sandwich with a banana and Greek yogurt. If you either eat like a bird, or you DGAF about what’s socially acceptable, I suppose you can define “meal” however you want too...

I love cereal and could eat it at anytime. Also love bagels with cream cheese.

An easy dinner (and sometimes lunch) I have is Rice & Beans & Cheese. You get a cup of minute rice - microwave it, a can of black beans - microwave that for about 2 mins, and then sprinkle shredded mexican cheese and boom, you're done. If I have some guac or hot sauce I like to mix that in too.

I love peanut butter too and can eat it just by itself or with jelly.......almost always on white bread though because I'm an f'n child tbh.....my gf eats peanut butter and Nutella to an alarming degree .....peanut butter is a staple here.......basically I work to afford peanut butter, nutella for her and cereal for both of us
I usually eat buttered egg noodles if I want to have a quick meal - it tastes like its fancy if you throw on some cheese but its really not at all....

Ladle hot rice into a bowl, mix in a raw egg. Add in a touch of shoyu or some other kind of soy sauce (just don't use Kikkoman like a heathen), a dash of furikake if you choose (I tear up some roasted seaweed if I have it), and BAM! you have a filling and tasty meal for minimal effort and an extremely cheap price. Garnish with green onions, if available. It's a lazy breakfast dish for me: I stick the rice in a rice cooker, take a shower, brush my teeth, come back in time for the rice to be done.

Scrambled eggs I guess. Will mix in whatever veggies I find in the fridge. Often do this for dinner if I’m just making something for myself and not the entire fam.

Burger and fries, scrambled eggs and bacon, microwave mac and cheese. Not really a gourmet other than liking a good steak or Italian, I'd eat crap like that all the time if I didn't have to eat healthy sometimes.

I mentioned egg rice, but my other go-to simple breakfast is this: Just the eggs, no toppings. The seasonings are amazing, and the eggs come out so AMAZINGLY moist. This tastes better than the egg rice, but it is slightly more involved, and I went with the simpler option. This is still a super, super simple dish.
