Inspired by Herzog's new Japanese movie that seems like it'll be a curious and welcome little addition to his filmography. He of course has several German masterpieces and some great English language especially if we count docs. Polanski too I've been thinking he has a Polish masterpiece and many English masterworks and J'accuse coming up his biggest in French....
One rule here - let's go with it has to be more than two languages otherwise there'll be too many to name. For example (and really the best example for actors) - Ingrid Bergman has made films in English, Swedish, Italian, German, French. But her A Woman Called Golda perf wouldn't count under Israeli or Yiddish bc that's an American production done in English.
So what ya got?
Michael Haneke - French : Cache, Amour, Piano Teacher German : White Ribbon, 71 Fragments, Fraulein, Funny Games English : his next Kelvin's Book a series will be a big one, but for now there's just Funny Games remake (which I love probably as much as the original)
Jules Dassin I have two Night and the City and Rififi, haven't seen a third language yet but he's made Greek and Italian films too.
Actors, who else? Viggo....?

For actors, I think Irene Papas takes the cake. She has participated in movies filmed in 8 different languages: Greek, English, French, Italian, Spanish, Portuguese, German and Serbian.
As for directors Abbas Kiarostami made films in 3 different countries (Iran, France, Japan). But I think the weirdest one is Mamoru Oshii, who, other than his Japanese films, has also made a film in Polish (his best work IMO).

Max Ophuls made films in France, America, Germany and Italy, which were produced by the country and in the country's language.
His work in France and America resulted in several masterpieces, but his work in Italy (La Signora di Tutti) and Germany (Liebelei) is also very good. Liebelei in particular is a beautifully made film.
Fritz Lang made several masterpieces in Germany and America. He also made Liliom (1934) a French production in French. Some consider it a masterpiece. Lang considered it one of his best films.
Robert Siodmak also made films in Germany, France and America, but I have only seen his American productions. I am curious to see the others.

It should be noted that Marion Cotillard has had to tango with French, English, Polish (even if the role was primarily English, her accent work was impressive as hell) and Belgian (which speaks a variety of French, but it still counts) and has been able to do exceedingly well in them all.

I though about her yesterday but I knew you will come and say her name. I add Bae Doona (Korean, Japanese, English) even if it's certainly more a case of her learning by heart each words than being anything close to fluent, especially in Japanese. Klaus Kinski has done some solid works in at least 3 languages too. Luis Buñuel for director too.

Costa-freakin-Gavras
It's like the man just traveled the world looking for political unrest to document. Even if the majority of his films are in French, it's pretty exceptional the wide breadth of countries and historical settings he examined. From Greece to Czechoslovakia to Uruguay to France to Chile, etc, his scope was unbelievable. One of the greatest political filmmakers of his time.
