I'd pick something not for the aural or visual elements actually. Movies of course are that great, odd thing where you sit with strangers in darkness and share the experience and the wonderful part can be sharing something together (ie you all respond similarly) or you respond one way and feel the people around you responding another. Because of that I'd think of some of my favorite, weirdest films and I would like to see play on a crowd - something like Seconds (1966) a film I always champion as top 10 American of the 60s - where the central casting (Rock Hudson) is operating at cross purposes with the actor chosen to the masses, where the plot is in step with the times but outside of the cinema of the time, where you're not sure where its going until the whole crowd gets there together and you can hear the "wtf was that?" as it ends

I've seen some of my top choices in the recent years (McCabe, GFII, Dog Day Afternoon) - DDA was very interesting bc I never realized just how funny the movie is, the audience I saw it with was laughing a lot.....
I'm kind of inclined to go with epics, long visual feasts like Laurence of Arabia or anything immersive, Suspiria is one I keep trying to see in theaters, but I've been either busy or the showings have been sold out.... Otherwise, something cult and uproarious-- what comes to mind, maybe Vampire's Kiss with a bunch of Cage fanatics lol.

This might be an odd choice to some people, but...
David Fincher's The Game.
I've seen it several times on dvd and blu-ray and it's been one of my favorites for a long time, but I get the sense that a theater viewing could be a really immersive experience.

I've been fortunate to have seen on the big screen most of the films I want to, but would still love to see Out of Africa, Longtime Companion, Goodfellas, A Passage to India, Raging Bull, and Dog Day Afternoon in a theatre.

Return of the Jedi is my favorite Star Wars movie and the only one I haven't seen in a theater, so that's probably near the top. Blew a chance to see 2001 a few years ago I've always regretted, though it was a small arthouse theater so it probably wouldn't have had as much of an impact as a bigger screen with better sound. I'd also add Kill Bill Vol. 1, Leone's westerns, Cocteau's Beauty and the Beast, Close Encounters, and Fantasia.
This thread is making me realize how insanely lucky I've been in regards to seeing classics this way, so I'm just being greedy at this point.
