In general I hate the term "twist" because they usually suck and involve a huge amount of dishonesty - like I don't consider Memento a twist, that's exactly what would happen, it's inevitable (to me)......M. Night Shyamalan has ruined his career over "twists" imo.
Sometimes, they are used in service of great films though, Spoorloos.......Oldboy's very last scene is a classic one and a wildly misunderstood one ......Blow Out is a great and sick (and twisted, like Oldboy) twist
But I would say the best twist specifically is A Tale of Two Sisters which happens to be heartbreaking and profound (and imo what Shutter Island is based on - the source novel is the same year (2003) and I've never heard Scorsese talk about it, but some shots are identical, it's clearly a huge influence on the film......... and that film is filled with cinematic references).

I'm not 100% on whether they are twists or not, but two that stand out are The French Connection (phenomenal film) and The Eagle has Landed (not so much). Again, not sure they're twist endings, probably a better word to describe them.

Mulholland Dr. is such a loose narrative that I wouldn't call anything in it a twist anymore than a regular film's conventional plot reveal. Oldboy is just Korean Oedipus Rex... not sure why you all are suprised.
The Empire Strikes Back is by far the best plot twist in mainstream cinema. I watched it again with my then-girlfriend who had no knowledge of the twist and I came to the realization of how great of a screenplay it really is.
Fight Club's twist recontexualizes not only the story but also the core message that had been clever satire and criticism of anarchy and masculinity all along.
Incendies pulls a sentimental gotcha twist but it ultimately benefits the picture by adding more depth to the characters.

That's not really true - the twist in Oldboy is the last scenes I mentioned after the "other " twist - not what came earlier in that it's his daughter - that's Oedipus Rex - but it's that the hypnotism, imo doesn't work, it's his final act of revenge - to wipe out the memory and live with her without knowing and instead it instills further suffering on himself Though you can take it the other way too, I think it's pretty clear that it's the darker ending one........

Two things make the twist in The Sixth Sense my absolute favorite:
1. It doesn't cheat the audience. Rewatches don't suddenly make the entire film fall apart or cause the viewer to strain to come up with an answer for why something did or didn't occur. In fact, rewatches just make the twist that much more impressive, as the foreknowledge recontextualizes the entire movie in a new dramatic light and the misdirection seems so obvious in retrospect.
2. The film could still work well without the twist, but the twist helps elevate everything the film had been narratively and thematically building towards. I honestly think if the film had ended with Haley Joel Osment and Toni Collette in the car, it still would have been a very well-received and successful film. But by going the extra mile with the twist, Shyamalan very poignantly reinforces his major themes regarding the afterlife and being able to peacefully move on.

The writing in Mullohand Drive is beyond incredible but I don't really see anything in it as a twist (although I understand how it can be looked at that way).
Some stuff that comes to mind for me -
The end of The Holy Mountain. The Sixth Sense. Empire Strikes Back. Scene towards the end of Dogville. Psycho.
