I was about to defend myself and my post but then I saw you guys filled a whole page arguing about Bardem and his consistency, so I changed my mind. You pretty much covered everything

Katherine Hepburn may be the only person who's a legit legend in both comedy and drama. Maybe Charlie Chaplin too, but he didn't do dramatic acting very often even if he was very good when he did. If Diane Keaton had done big dramas more often into the 80's/90's she could have had a very similar career arc to Katherine Hepburn although you never see them compared.
De Niro, Nicholson, and Brando acted in just about every genre under the sun too.
Also agree with the Jimmy Stewart mention. He started out with the wholesome Capra rom-coms but then went on to star in westerns, leading man roles in Hitchcock thrillers, comedies, and straight dramas.
Tom Cruise deserves a shout out here too. He's done comedy (but he should do it more often), drama, romance, action. He had his vulnerable, earnest young man shtick early in his career but played villains and assholes later.

von Sydow has medieval, action, adventure, biblical, horror, sci-fi, fantasy, nature epic, biopic, philosophical, arthouse, comedy etc pretty much covered.

Gene Hackman really could act in about any genre. He did little comedy, but his performance in Royal Tenenbaums is widely revered. He had dramas, thrillers, court films, western, superhero films, war, etc.

Another one could be Robin Williams. Not every film genre but many of them:
Comedies of course, enough dramas (awakenings, dead poets, Will Hunting, fisher king), a war drama (good morning Vietnam), a film based on comic books (Popeye), black comedy (man of the year), thriller (one hour photo), insomnia was something like a mystery-adventure movie or maybe a noir-type film, sci-fi (bicentennial man), fantasy (what dreams may come), family movies (flubber, hook), Baron Munchausen was a period movie, adventure-family flick or whatever genre a Gilliam movie could be... He was also part of the cast in a Shakespeare adaptation (Branagh's Hamlet).
No horror movies or westerns or biographies (but played Eisenhower in the butler), yet he tried many different genres and I liked him in all of it.

Naomi Watts. She has done horror (The Ring), Comedy (While We're Young, St. Vincent, I Heart Huckabees), black comedy (Birdman), Film Noir/Psychological Thriller (Mulholland Drive, Eastern Promises), Superhero/Action (Tank Girl), Science Fiction/Action (Insurgent), political biopic (Fair Game), Western (Ned Kelly), Disaster film (The Impossible) Period Romantic Epics (King Kong, The Painted Veil). All of these moderate to giant successes.
