The Dollars Trilogy, particularly The Good, the Bad and the Ugly I can also mention No Country for Old Men as well, if it counts (it's a neo-western)

Once Upon a Time in the West moved me in an unusual way when I very young... and I haven't re-watched it in years.
For now, another vote for the heartbreaking and beautiful The Assassination of Jesse James.

I don't really consider Dead Man a western, but if we're counting that then it is without a doubt #1.
Otherwise, I'd go with The Assassination of Jesse James by the Coward Robert Ford.

Tombstone. Probably my favorite film ever.
