I feel he tends to skew towards character actors, actors he use to like to see while growing up, actors with comedic sensibilities, stunt casting, b-movie actors, A-listers cutting loose and having fun for once, and some who just seriously need a comeback.
With that in mind....
Michael Shannon Mark Wahlberg Billy Bob Thornton Benicio Del Toro Eric Roberts George Clooney Nicolas Cage Tom Cruise(stunt casting) John C Reilly Jeff Bridges Josh Brolin Woody Harrelson Adam Driver Daniel Day-Lewis(come out of retirement for this last role)
Actresses: Meryl Streep(stunt casting) Cate Blanchett Halle Berry Selma Hayek Sharon Stone Winona Ryder

George Clooney. Not the world's greatest actor, but he'd be hilarious in Inglourious Basterds side character mode.
Edit: I swear you had missed him. My bad.

I mean of course he worked with him on From Dusk Till Dawn, but this would be a different context and I could totally see him write a character specifically with him in mind.

Ryan Gosling has shown strong comedic chops in stuff like The Nice Guys and The Big Short, I could see him spouting QT dialogue.
Before he got canceled, Kevin Spacey would have been good.
Patrick Stewart in any QT role ever would be something to see.

Eva Green Helen Mirren Matthew McConaughey Pedro Pascal Ben Mendelsohn Winston Duke Danny McBride
Michael K. Williams might still be owed after getting cut from Django Unchained. Speaking of which, Kevin Costner.

Clooney could be a fantastic choice. He's a fine actor who can play drama and comedie. Esp. his comedic, witty talent shown in a QT script would be something special.
I'd also like Nicholson to work with him. QT likes to work with older/ iconic actors (Carradine, Dern, Pacino, almost Reynolds) and Jack could play literally every genre and role and I'm sure Tarantino could create a part that'd fit him 100%. Then again, I'd be happy to see Nicholson in a new movie no matter the director...

Post-Uncut Gems, would Adam Sandler answer the call or would he choose another Netflix-paid vacation?

Post-Uncut Gems, would Adam Sandler answer the call or would he choose another Netflix-paid vacation? He'll be paid about 250 mil. from Netflix in order to make 4 Netflix movies, so you got your answer.

We are, actually And I guess there are some more I'm also forgetting.

Chris Pine of course. Preferably in the potentially R rated Star Trek film that Tarantino keeps talking about making.

Pretty much anyone and everyone from Breaking Bad. I could only see Cranston working with him. Or even Anna Gunn. Nobody else.

Tom Hardy seems like a good fit.

Yesterday I said about QT working with older/iconic actors and actresses and about the comedic scenes he's writing and his characters' wit.
I think an actor that could fit all the above is Kevin Costner.
Never thought much of him, even in the best days of his career (early 90s) but he can definitely serve comedic roles very well. I guess he could easily play a Tarantino part (witty, fast talking, being in action sequences etc).

My first thought as well. Could be a terrific pair up. Beyond that, Gary Oldman. I mean he was in True Romance, but that hardly counts.
