Quiz Show, Barton Fink, The Night Of, Clockers and let's say Secret Window. He's the man. The way he lit up those Transformers movies even when they were at their worst was a miracle.

The actor of the '90s. He'd feature in my top 10 of all-time.
Miller's Crossing - Forget the Crossing crying scene (which is amazing). The scene where he knows he's got Byrne's character by the balls.... brilliant! I love how disparate those two scenes are. He turns in an instant.
Jungle Fever - "I'm not your fuckin' wife, I'm your son! You had your life! I want a life, man! You had yours!" Wow. Breath control, pauses, the delivery of this speech should be studied by every aspiring actor.
Barton Fink - carries it
Quiz Show - steals it
Brain Donors - his Groucho moment. He can do drama, thriller, comedy, all with equal ease.
He's just a terribly good actor, and he's more than a little underrated.

Find his acting more grating than anything, especially when he worked with the Coens.

speaking of Turturro, he just appeared on Marc Maron's podcast. Interview starts at around the 20-minute mark but obviously the whole thing is worth listening to if you have the time, especially because Marc divulges some insights beforehand about how the conversation went. The whole exchange between them is really illuminating and thoughtful. John seems like a wonderful guy.
