I don't mean stuff like broccoli or stuff you hated as a kid (and if you like broccoli as a kid, WELL GOOD FOR YOU!) I mean stuff you had as an adult didn't like and then later on suddenly like it.
For instance, recently I got super into coffee cake. I used to hate it and now I just had a good third of an Entenmenn's tray of it in one sitting.

Fajitas. Never was big on them until six months ago, and now I love 'em like mad.
Also mushrooms, thanks to Phantom Thread. And yes, I get the irony.

Buffalo wings and banana peppers -- more into spicy foods as I've gotten older.

I'm all about Sushi. But I think that's mainly because I haven't had the opportunity to eat it a bunch so I kind of wrote it off, but I've been all about it recently .
I've always loved Asparagus, but recently it's become probably my favorite food.

Cheese. Which is simply because I discovered artisanal cheeses a few years ago. The factory produced stuff is and always will be crap. But fancy cheese is beautiful. I let it sit out and gaze longingly, waiting for it to hit room temperature as I wipe away tears that this art cannot be appreciated in perpetuity.

There is absolutely nothing wrong with factory produced cheese. "Crap" is too strong a word. But it's.... blah. If it's melted down in a sandwich, I guess it's fine. Artisanal cheeses have very unique flavors and smells, and they're truly something I cherish. Each and every new one I encounter is an adventure. Some of them aren't great, but most are pretty spectacular.

I've been doing a lot of mashed sweet potato... a) it seems to always be on sale, b) it's easy to make, and c) it's actually decently good for you as far as starches go.
Taste is good... but the sheer ease and low cost (it only takes about 3 large sweet potatoes and I got all the carbs for my weekly dinner done) have made this a current staple. Which is nice because a man can only eat so much god damned rice.

Peppers for me, bell peppers that is.
I used to disdain this things, to the point were picking them out of something wasn't enough. The remnants of flavour they would leave behind would have been enough to have ruined whatever they had been in. It has all changed now for some reason. I love them, aside from the green ones, which I'm just tolerant of.

Have only ever known them as capsicums.

Have only ever known them as capsicums. It is strange. In Ireland we just call them peppers, but I figured that would lead to confusion with you're spicy peppers, so I added the bell. I have heard capsicum being used before on occasion.
It's the same with Aubergine (Ireland & UK for sure) and Eggplant.

Not really that I never cared for it but man, I had a tremendous BLT today and I haven't had a BLT in forever......like how did that get totally eliminated as a lunch option and why would I just randomly add it back in as a lunch option. I mean I eat lunch every day - I should have this stuff figured out by now.
